Hummus-crusted chicken came onto my radar when I was trying to think of another easy Chicken Sheet Pan Dinner. Since I had just made a batch of hummus for myself (Mr Delightful doesn't do dips), I thought this chicken would be a good way to use it all up and sneak a little of it to Mr Delightful in a non-dip kind of way!

You can make it with your favorite store-bought hummus, if you have one. I don't, because they're all way too garlicky for me. And, besides, I just like my homemade Hummus better, and it's organic. I have to leave out the garlic altogether these days, but my recipe includes just the right amount of garlic for those who aren't allergic.

I'm going to do one thing differently next time: Don't you think pressing on a sprinkling of sesame seeds for a little crunch would be a nice touch?

I use a 15x10x1-inch jelly roll pan or an 18x13x1-inch half sheet pan for dinner for two or three, and a 13x9x1-inch quarter sheet pan when it's dinner for one. You just do a few minutes of prep in the morning, put it in the fridge, then pop it in the over when you're ready. The sort of streamlined cooking perfect for a busy day.

Hummus-Crusted Chicken Sheet Pan Dinner

(Makes one serving, just multiply for more)

1 1/2 tablespoons extra virgin olive oil
1 6-ounce (170 grams) boneless skinless chicken breast
About 1/8 teaspoon salt
About 1/8 teaspoon coarsely ground black pepper
1 to 2 tablespoons hummus, depending on the surface area of the chicken

About 1/8 teaspoon paprika or smoked paprika
Optional: 1/2 teaspoon or so of sesame seeds
6 ounces (170 grams) cauliflower and broccoli florets
6 ounces (170 grams) orange-flesh sweet potato, peeled and cut into 1/3- to 1/2-inch slices
Optional: a little cinnamon-sugar for the sweet potato slices 

1 Use a 1/2 tablespoon of the olive oil to oil a quarter sheet pan (foil-lined or not) for one or 1 tablespoon for jelly roll pan for two or half sheet pan for three. Place the chicken breast(s) in the middle of the pan. Season the top side with some of the salt and pepper. Spread the hummus on the top and sides, just a thin, even layer. Sprinkle with paprika and sesame seeds.


2 Spread the cauliflower and broccoli florets on one end of the pan and drizzle with 1/2 tablespoon of the olive oil per serving, tossing to coat well; sprinkle with the remaining salt and pepper. Spread the sweet potato slices at the other end of the pan and drizzle with 1/2 tablespoon of the olive oil per serving, turning to coat well; if desired, sprinkle the tops with a little cinnamon-sugar.

3 Cover and refrigerate until time to bake. Preheat oven to 400F/205C/Gas6. Bake uncovered for 30 minutes.

  1. I used to make my own hummus but like everything else I don't do that anymore. I've found Boar's Head brand to be quite good, lots of garlic and lemon. I can't imagine having to eliminate garlic from my diet - I put in in EVERYTHING! Garlic and olive oil - can't live without them. I will keep this idea in the back of my mind - even if just to do the chicken that way - such an interesting combination. (My husband hates broccoli and I hate cauliflower so maybe a side of carrots or even spaghetti with garlic and oil LOL)

  3. Thanks, Grace. Yeah, you can throw anything you like on that sheet pan--potatoes, squash, eggplant, apples, whatever makes you happy! Garlic is a tough thing to be allergic to, hard to avoid when dining out.

  4. Sesame seeds crunch? Was this just a loose reference to the toasting overall or is my ignorance showing again? Crusted chicken is a big family in my kitchen. Wears a lot of coats. Being too lazy and too indiscriminant to make coatings from scratch, Italian garlic crumbs (usually Progresso) are most often the base, but pecans, coconut, cashews et al may get in the mix. I even freelance the crust without in addition to putting it on the chicken, letting it soak up with brown rice, sautéing in butter and scraped up at the right moment using a spatula. Not greasy if the proportions are right. Love your alliteration: Mr. Delightful doesn’t do dips…

  7. Thanks, Sully. I was hoping someone would appreciate my alliteration! Yep, those sesame seeds would toast nicely as the chicken baked. Can't go wrong with any nuts and seeds when it comes to chicken. I especially like hazelnuts with chicken.

  10. Now that looks like such a healthy, and colorful meal, Jean. Prepping it in the morning makes it even better! I made a sheet pan meal just last week with chicken, butternut squash and multi-colored pepper slices. I put it on the outdoor grill to keep my kitchen cooler.

  11. That's a fine idea. I'm very fond of dips but I usually make too much and I'm very happy to see another way of using hummus. I'd definitely try the sesame seeds (maybe a mix of black and white?): they look good as well as adding the crunch. When I was but a young thing I'd use plenty of garlic in dips but these days I much prefer a subtle and gentle garlic flavour when it's used uncooked in dips and sauces such as hummus or pesto. I'd like to claim to be more sophisticated in my tastes these days but I'm not sure that's true.

  32. Jean - I now laugh when people freak out (to use the youth-of-today vernacular) that I can’t eat garlic. It really just proves that we overuse the stuff in our society. My European friends never even bat an eyelid because they have maintained sanity in their seasoning!

    Now, on to your fantastic recipe! What a great idea - I make a “hummus” with toasted shallots, garbanzos, and orange rind and juice. I think it would be amazing atop some chicken breasts.

  37. Mmm, this looks so good! I've never had homemade hummus but I bet it's fantastic. Looks like an easy and tasty meal. BTW, I made chili today with pinto beans. This is the first time I've used them and we both really like them. Lots of protein. Thank you for another tasty meal idea.
